How do the build up to an attack, which players are essential to that particular build up. Looking at their defensive block, where do they create space, how do the opposition create chances and so on. Ive never done a scouting report on a team, so my advice is just what I would do in your situation. Do you know if there are any online tools to create those football field graphics That would be awesome and is a great visualisation. Map out their team and make notes on the players - highlights strengths, weaknesses, and tendancies. Look at how the team plays in each of the 4 phases in each of the 3 areas of the field. If you can get stats to backup and get a more detailed view of those players.
